I still get surprised by Vietnamese food.
There’s so much diversity. If you know anything about the ethnic groups that make up Vietnam, there’s also lots of cultural differences (usually celebrated with oppression by the communist government) making the cuisine varied and at times peculiar.
Throw in the influence of settlers and would be conquerers like the French and other smaller groups and you’re eating bread and making intense soup unlike any other place in SE Asia.
I’m a big fan, but unlike Thai food, I’m a novice when it comes to my knowledge of the more eclectic dishes. One of those dishes is the Vietnamese cari ga, a think yellow curry with stewed veggies and succulent chicken.
Although it’s new to me, we became acquainted very fast and I sopped up every last drop of the cari ga with a toasty French baguette.
